Happy Cinco de Mayo!

My jewelry making has been highly production based lately, so I don’t have jewelry making tips or new designs to share today.  I am a little bored of the same old, same old. But, I am getting ready to make some really fun jewelry with buttons for Sweet Bead Studio’s Button Swap Challenge!

 Instead of being silent, I thought I would share a bit of my weekend with you today.


I have been running to and from my son & daughter’s soccer games – Brinn (4) scored her first goal today!  Go Brinn!


I’ve been in the kitchen.

I love to cook!  I like to make healthy dishes as much as I can and I love Mexican and Southwestern flavors.   Since today is Cinco de Mayo, I am going to share one of my favorite healthy Mexican inspired dishes.  Everyone – kids included, love it!  Quinoa and black bean salad.   Have you ever used quinoa (pronounced – Keenwah)?  It is one of my favorite grains.  Super healthy and diverse.   It is the only plant based food that is a complete protein.



Quinoa & Black Bean Salad

1 cup washed and drained quinoa.  White grain.  It also comes in red.
2 cups water
1/4 cup olive oil
juice from 2 limes
1 tsp cumin
1/2 tsp red peper flakes
1 can black beans, rinsed
1 1/2 cups cherry or grape tomatoes, cut in half
5 green onions, finely chopped
1/2 cup corn.  Sometimes I use roasted, frozen corn from Trader Joe's. 
1/4 cup fresh cilantro finely chopped,  a little extra for garnish
Salt and pepper to taste
1) Rinse quinoa and cook according to directions.  Let quinoa cool.
2)  Whisk together olive oil, lime juice, cumin and red pepper flakes.
3) Combine cool quinoa, beans, tomatoes, corn, and onions in a large bowl.
4) Pour dressing over salad and toss in the cilantro.  Season with salt and pepper.
5) Add extra lime or cilantro for pretty garnish if desired.

Easy, Delicious & Healthy!


We are headed to the National Harbor tomorrow afternoon with a group of friends for the Food & Wine Festival.  Lots of gourmet food, wine, beer and cooking demonstrations with famous chefs.  Hopefully, since it is Cinqo de Mayo weekend there will be some good Mexican food represented.  Should be fun!

  7. Hi Tracy! I’m taking a little writing break to stop by an say hi! So how was your evening at the National Harbor? It sounded like a blast. One of these days I’m going to get a babysitter so Randy and I can enjoy some of the amazing things going on in our area.
